Lime/lemon curd


  • 2 egg yolks
  • 100g caster sugar
  • 100g butter or margarine
  • juice of 1 lime or lemon


  1. Cream the egg yolks and sugar in a bowl with a whisk.
  2. Add the butter and juice of lime.
  3. Place in a bain-marie on a low heat and whisk continuously until it thickens. This can take up to 30 minutes.
