Ingredients:
- 2 egg yolks
- 100g caster sugar
- 100g butter or margarine
- juice of 1 lime or lemon
Method
- Cream the egg yolks and sugar in a bowl with a whisk.
- Add the butter and juice of lime.
- Place in a bain-marie on a low heat and whisk continuously until it thickens. This can take up to 30 minutes.
